Everything is vegetarian and many recipes are completely plant-based. No recipes contain dairy, but if you need it to be dairy-free, be sure to double check the chocolate ingredients! Enjoy!

Ways to Use Leftovers
If you’re cooking pumpkin or any other kind of winter squash, save the seeds! Clean and dry them, then try one of the two recipes below.
Leftover baked sweet potatoes or sweet potato mash? Mix with eggs and super simple pancakes!
You can also toss leftover veggies into cauliflower fried “rice.”
Leftover veggies? Chop them up and use them in an omelet, or an omelet muffin!
In a medium bowl, whisk together coconut flour, sugar, baking powder, and salt. Add eggs and almond milk and mix very well until smooth. The batter should be thick enough to stick to the back of a spoon, but thin enough to run off the spoon.
Heat the oil in a nonstick pan over medium heat. Pour about 1/4 of the pancake batter into the pan for each pancake. Drop in blueberries or other mix-ins into the pancakes. When the bottom of the pancake is golden brown, flip and let the other side cook until golden brown.
