Vegan Mayo
Ingredients
- 1/4 cup plus 2 Tbsp silken tofu
- 1/4 cup oil (grapeseed oil or olive oil)
- 1 teaspoon dijon mustard
- 1 teaspoon lemon juice
- salt to taste

Combine all ingredients and blend well, until completely smooth. Adjust salt to taste. Refrigerate and use as needed within a couple of days. |
