This refreshing noodle salad will fill you up with hearty whole grains, colorful vegetables, tender legumes (edamame), and a healthy oil! Feel free to substitute other vegetables.
Ingredients
- 2 rolls soba noodles
- 2 cups cucumber, spiral sliced or julienned
- 2 cups shelled edamame
- 1 cup carrots, shredded
- 1 cup red bell pepper, thinly sliced
- 1 cup sugar snap peas
- 2 tablespoons sesame seeds (optional)
Dressing
- 1/4 cup sesame oil
- 1/4 cup reduced sodium tamari or soy sauce
- 2 tablespoons rice vinegar (or more to taste)
- pinch chili flakes (optional)
Directions
Step 1

Cook soba noodles according to package instructions. Drain and rinse with cold water once cooked. |
Step 2

Meanwhile, prepare the vegetables if you haven't done so already. |
Step 3

Combine dressing ingredients in a small bowl or shake together in a jar. Add more vinegar to taste if you'd like it to be tangier. |
Step 4
|
In a large bowl, toss noodles, vegetables, and dressing together. Garnish with sesame seeds and serve. |
