This refreshing noodle salad will fill you up with hearty whole grains, colorful vegetables, tender legumes (edamame), and a healthy oil! Feel free to substitute other vegetables.

Ingredients

  • 2 rolls soba noodles
  • 2 cups cucumber, spiral sliced or julienned
  • 2 cups shelled edamame
  • 1 cup carrots, shredded
  • 1 cup red bell pepper, thinly sliced
  • 1 cup sugar snap peas
  • 2 tablespoons sesame seeds (optional)

Dressing

  • 1/4 cup sesame oil
  • 1/4 cup reduced sodium tamari or soy sauce
  • 2 tablespoons rice vinegar (or more to taste)
  • pinch chili flakes (optional)

Directions

Step 1
Cook soba noodles according to package instructions. Drain and rinse with cold water once cooked.
Step 2
Meanwhile, prepare the vegetables if you haven't done so already.
Step 3
Combine dressing ingredients in a small bowl or shake together in a jar. Add more vinegar to taste if you'd like it to be tangier.
Step 4
In a large bowl, toss noodles, vegetables, and dressing together. Garnish with sesame seeds and serve.
