Red Velvet Beet Cookies
Add 1-2 eggs? Too crumbly, and flattened quite a bit. Maybe try flax egg to keep it vegan. Or try liquid sweetener such as honey/maple. Maybe less flaky if use WW flour.
Ingredients
- 1/2 cup beet puree
- 1/2 cup virgin coconut oil
- 1/2 cup sugar
- 1 cup almond meal
- 1/4 cup cocoa powder
- 2 teaspoons vanilla extract
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips

Preheat oven to 350˚F. Cream coconut oil with sugar in a food processor or with a mixer. Combine dry ingredients in a separate bowl, then add to coconut oil/sugar mixture, along with beet puree, vanilla extract, and liquid stevia. Mix until well combined. Fold in chocolate chips. |

Place small balls of dough (about 2-3 teaspoons worth) onto a cookie sheet, using a small cookie scoop if desired. Bake for 10-12 minutes. Let cool on pan for 5 minutes, then transfer to a cooling rack. Store in an airtight container. |
