Pulled BBQ Portabello
Ingredients
- 3 portabello mushrooms (thinly sliced)
- 1/2 yellow onion (thinly sliced)
- 1 tablespoon olive oil
- 1/3 cup barbecue sauce

Preheat a large nonstick (non-Teflon preferred) pan over medium-high heat. Add the oil, then onion. Cook until onions are caramelized, stirring occasionally, about 5 minutes. Add mushrooms and cook until mushrooms are dark and tender, stirring occasionally, about 5 minutes. | |

Add enough barbecue sauce to lightly coat all mushrooms, about 1/3 cup. Reduce heat to low and cook until sauce thickens and mushrooms become very tender, about 15-20 minutes. Serve on lettuce wraps, as a topping on a baked potato or sweet potato, or on a whole grain bun. |
