Make a big batch of healthy pasta for dinner using just one pot! Clean-up is a breeze, especially since this recipe requires minimal chopping.
Ingredients
- 1 quart low sodium vegetable broth
- 28oz diced tomatoes
- 16oz frozen spinach
- 15oz white beans, rinsed and drained
- 12oz whole wheat spaghetti
- 1 medium yellow onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 teaspoons dried oregano
- salt to taste
Directions
Step 1

In a large pot, combine broth, tomatoes, spinach, beans, pasta, onion, garlic, and oregano. |
Step 2

Over high heat, bring to a boil, then simmer for 10-15 minutes. Stir occasionally to keep the pasta from sticking, but avoid stirring too much to prevent mushy pasta and beans. When the pasta is al dente and most of the liquid is absorbed, remove from heat, stir in salt to taste, and serve. |
