Step 1

Preheat oven to 400F. Line a baking sheet with parchment paper or a silicone mat. |

Squeeze out the moisture from the hearts of palm and break up into small pieces no more than 1 inch in length. You can cut them up with a knife if needed. Add to a medium bowl along with all other ingredients except panko. Gently stir to combine, then fold in 1/2 cup panko. |

Place remaining 1/2 cup panko onto a plate. Form 6 cakes with the hearts of palm mixture, then dip both sides into the panko. Place onto baking sheet and repeat with remaining cakes. Bake for about 20 minutes, or until they start to brown on the underside, then flip cakes and bake for another 5-10 minutes or until underside is light brown. |
