Cashew Chicken

Ingredients

  • 1 1/2 tablespoon peanut oil
  • 1lb boneless skinless chicken breast
  • 1/2 Medium yellow onion
  • 1/2 red or yellow bell pepper
  • 8-10 shiitake mushrooms
  • 4oz snow peas
  • 3 cloves garlic
  • 1/2 cup cashews
  • 1/4 cup low sodium tamari
  • 1/4 cup Shaoxing rice wine
  • 2 tablespoons oyster sauce
  • 1 teaspoon dry mustard
  • 2 teaspoons chili paste with beans
  • 2 1/2 teaspoons corn starch
  • 1 teaspoon rice wine

Directions

Step 1
Marinate the chicken in 2 teaspoons corn starch and rice vinegar for 15 minutes.
Step 2
Heat a wok or large pan over medium high heat. Add 1 tablespoon peanut oil. Add the chicken and cook until fully cooked, 4-5 minutes. Remove from pan and set aside.
Step 3
Add 1/2 tablespoon peanut oil to the wok, then add the onion, cooking for 2 minutes. Add the shiitake mushrooms and garlic, cook for one minute. Add the snow peas and cashews, and cook for one more minute.
Step 4
Whisk together remaining ingredients to make the sauce. Add the chicken back to the pan, then add the sauce and stir. Bring sauce to a boil, then remove from heat and serve.
