Step 1

Marinate the chicken in 2 teaspoons corn starch and rice vinegar for 15 minutes. |

Heat a wok or large pan over medium high heat. Add 1 tablespoon peanut oil. Add the chicken and cook until fully cooked, 4-5 minutes. Remove from pan and set aside. |

Add 1/2 tablespoon peanut oil to the wok, then add the onion, cooking for 2 minutes. Add the shiitake mushrooms and garlic, cook for one minute. Add the snow peas and cashews, and cook for one more minute. |

Whisk together remaining ingredients to make the sauce. Add the chicken back to the pan, then add the sauce and stir. Bring sauce to a boil, then remove from heat and serve. |
