Butternut Squash, Sweet Potato and Apple Hash

Serves 6-8

Ingredients

  • 3 tablespoons olive oil
  • 1 medium butternut squash (peeled and 1/2-inch dice)
  • 2 small sweet potatoes (peeled and 1/2-inch dice)
  • 1/2 cup yellow onion (diced)
  • 2 tablespoons fresh sage (minced)
  • 2 medium apples (diced)
  • 1/2 cup pecan halves (roughly chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

Step 1
Heat a large skillet over medium heat.
Step 2
Add olive oil. Add butternut squash, sweet potatoes, and onions. Cook, stirring occasionally, for about 10 minutes or until the vegetables just begin to soften and develop a light brown crust. Add sage and stir. Continue cooking until vegetables are almost fork tender, about another 5-10 minutes.
Step 3
Add apples, pecans, salt and pepper. Cook another 3-4 minutes until vegetables are tender but not mushy.
