Butternut Squash, Sweet Potato and Apple Hash

Ingredients
- 3 tablespoons olive oil
- 1 medium butternut squash (peeled and 1/2-inch dice)
- 2 small sweet potatoes (peeled and 1/2-inch dice)
- 1/2 cup yellow onion (diced)
- 2 tablespoons fresh sage (minced)
- 2 medium apples (diced)
- 1/2 cup pecan halves (roughly chopped)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Heat a large skillet over medium heat. | |

Add olive oil. Add butternut squash, sweet potatoes, and onions. Cook, stirring occasionally, for about 10 minutes or until the vegetables just begin to soften and develop a light brown crust. Add sage and stir. Continue cooking until vegetables are almost fork tender, about another 5-10 minutes. | |

Add apples, pecans, salt and pepper. Cook another 3-4 minutes until vegetables are tender but not mushy. |
