Vegan Mayo

Ingredients

  • 1/4 cup plus 2 Tbsp silken tofu
  • 1/4 cup oil (grapeseed oil or olive oil)
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • salt to taste

Directions

Step 1
Combine all ingredients and blend well, until completely smooth. Adjust salt to taste. Refrigerate and use as needed within a couple of days.
